grilled salmon with black bean and corn salsa
salmon is my own recipe and bean and corn salsa is inspired by clarecooks.wordpress.com
i shared the recipe i use for grilled salmon on jan 9th!

black bean and corn salsa:
1 can sweet corn
1 can black beans
1 avocado
1 red bell pepper
juice of 1 lime
fresh cilantro, chopped
salt and pepper to taste
drain corn and black beans and mix in bowl. chop bell pepper and scoop out avocado and add to mixture. add chopped cilantro (i like a lot of cilantro), juice of lime and salt and pepper. place in refrigerator for about an hour to get cold before serving on top of hot salmon. i served this meal with quinoa because that is our go to side dish!





This is a brilliant recipe. Living on the west coast – salmon is everywhere. Even a short walk down our road to the Fraser River. I often see fishermen on the banks fishing for salmon. And of course, everyone is very generous with their catch – so I always have salmon in my freezer. This is how I am going to serve it the next time salmon is on my menu. Virginia
Salmon in the heartland isn’t as good as on the coast, but I will definitely try fixing it this way sometime!
