garlic roasted cauliflower

1 large head of cauliflower

2 tbsp minced garlic

3 tbsp olive oil

1 tsp salt

1 tsp pepper

1 tsp red pepper

1/4 cup fresh parsley

2 tbsp freshly squeezed lemon juice

preheat oven to 450 degrees.  cut cauliflower into bite size pieces.  in a large bowl, toss cauliflower, 2 tbsp of olive oil, salt, pepper, and red pepper.  spread onto a baking sheet and roast for 20-25 minutes.  remove cauliflower from oven and place back in bowl.  add garlic, lemon juice, parsley, and 1 tsp olive oil.  toss throughly and enjoy!
